Summers are by far the busiest time of year for our family. We spend as much time as we can outdoors. My husband and my youngest like to garden, and my son rides his bike hatching Pokémon eggs. I just really love the quiet that comes when the kids are playing and I can get a little work done. No matter what we’re doing, we all need a little more energy during the summer months.
Our family is HUGE into making S’mores and we’re lucky enough to be able to have small campfires on our property. But, when the temps reach into the 90s, the last thing we want to do is sit by a fire. I found a way to use our favorite non-GMO, soy-free treat, ProYo High Protein Low Fat Ice Creams, in a layered S’mores inspired dessert!

Lately, we’ve been making a greater effort to eat things that are healthier for us. Especially as we near the close of our first round of Whole30 (this dessert is not part of Whole30 but it will be part of our completion celebration), we’re looking at labels more closely. High Protein Frozen Layered S’mores Inspired Dessert
In keeping with the gluten-free aspect of ProYo High Protein Low Fat Ice Creams, we also wanted to keep this dessert gluten-free, so we used Multi Grain Cheerios for the graham cracker-like crust. It definitely added a sweetness we weren’t expecting but that the kids loved (and didn’t even notice!).
We added about 3-4 cups of cereal to our food processor along with 3 tablespoons of melted butter.
You want the mixture to look dry but when pressed, holds together nicely. And, see? You can’t even tell it’s not graham crackers!
Once the mixture is at the desired consistency, pat down into either a silicone cupcake pan or into individual cups or bowls. I found these super cute ramekins at my Kroger Store when I picked up ALL the flavors of ProYo High Protein Low Fat Ice Creams.
Once your “graham cracker” base is in place, add a layer of tiny marshmallows, then a few or more chocolate chips. I like the miniature ones the best for this because you’re more likely to get one in every bite.
Now, you can add your favorite flavor of ProYo High Protein Low Fat Ice Cream. I love the Dutch Chocolate or the Mocha for this dessert (or a mixture of both!) but I like to soften it a bit so that it sinks in between the marshmallows and chocolate chips. I do this by adding a tiny bit of milk or almond milk to the ice cream in a blender just until it’s smooth.
Once you’ve added all your layers, cover them with plastic wrap and pop ’em in the freezer for about half an hour, just until the ice cream hardens a bit.
