Ask anyone in my family what my dad’s specialty dishes are and every single person will tell you – his mouth-watering lasagna and his Cheesy Chili Bean Dip. I can’t tell you how the tradition started because it’s been requested for so many holidays for so many years. On Thanksgiving, he makes two pans; one for the family, and one for the fridge so we can have our own pan later.
It’s not difficult to see why once you taste it. It’s a no-brainer for him because it’s super easy to make. I love it, but what I don’t love is the Satan’s-fire-in-my-belly feeling whenever I eat it; and I always eat it, despite knowing what it does to me. I think we all have a dish like that, right?
After I had kids, heartburn became a far more regular occurrence for me. Soda, alcohol, chocolate, garlic, even some fruits, and yes, dad’s bean dip – all cause me heartburn. What else do these foods have in common? Most of them, if not all, are traditionally part of holiday celebrations.

Dad’s Cheesy Chili Bean Dip Recipe
Thanks to my dad, I have his recipe to share so you can see why this bean dip is the most requested dish to share during the holidays!
It’s simple to make and will be a hit with anyone – especially anyone prepared with their dose of Nexium® 24HR 🙂
In a bowl, mix together browned ground beef, a packet of taco seasoning, a can of your favorite chili, a can of refried beans, and a jar of taco sauce.
Mix well and pour into a pan. Top with shredded cheddar cheese and bake at 375 degrees until cheese is melted and bubbling.
You guys, it’s THAT easy. My dad is an uber genius!
- 1 pound of ground chuck
- 1 packet of taco seasoning
- 1 large can of your favorite chili (approx 32-38 oz)
- 1 large can of refried beans (approx 30-35 oz)
- 1 large jar of taco sauce (16 oz or greater)
- 1 package of cheddar cheese (as much cheesiness as you want!)
- Chopped green onions
- Brown hamburger and drain grease. Add taco seasoning according to the directions on the package.
- In a bowl, combine the chili, refried beans, and taco sauce. Stir in the seasoned hamburger, making sure everything is mixed well.
- Pour into a pan, smoothing the top. Sprinkle heavily with cheese. Bake at 375 degrees until cheese is melted and bubbling.
- Top with chopped green onions.
- This recipe is a very open one; very little measuring is required.
