Orange-Glazed Ham #WeightWatchers recipe

Our family has been trying to not only prepare more foods at home, but to make meals that are healthy and delicious and those aren’t always easy to find. A friend from the blog world (Leah Segedie from Mamavation) suggested that I try a Weight Watchers cookbook. I was seriously doubting that anything from Weight Watchers would be delicious or filling, let alone something that the kids would enjoy. I was able to find quite a few recipes that we enjoyed, including this one for Orange-Glazed Ham. It’s easy to prepare and takes almost no time to cook!

Ingredients

  • 1 (3.4-lb) Ready-to-eat boneless ham
  • 4 Whole cloves
  • 4 Slices canned pineapple (Drained, quartered, reserve 1/2 c. juice)
  • 1/2 cup Orange juice
  • 3 tablespoons Orange marmalade
  • 1/4 teaspoon Cinnamon

Note

PER SERVING (1/4 of ham and glaze): 196 cal, 4g Fat, 1g Sat Fat, 0g Trans Fat, 40mg Chol, 1224mg Sod, 23g Carb, 1g Fiber, 17g Prot, 25mg Calc. Weight Watchers points value: 4

Directions

Step 1
Preheat oven to 400 degrees. Make several cuts along the edge of the ham. I like to crosscut for a prettier ham and so that the juices can really penetrate the ham. Stud with the whole cloves (I like to add a stud at each crosscut). Place in a shallow ovenproof pan. Place pineapple around or on the ham.
Step 2
To make the glaze, in a small saucepan, combine the pineapple juice (reserved from the can), orange juice, marmalade and cinnamon; bring to a boil. Boil until slightly thickened (about 5-6 minutes). For a thicker glaze, allow to boil longer. Pour glaze over the ham.
Step 3
Bake, basting occasionally with the glaze, about 15-20 minutes. The glaze should be thickened. If there is too much liquid, remove the ham from the pan. Keep warm. Return the pineapple and glaze to the upper oven rack until the glaze thickens (about 5-10 minutes). Serve the ham with the pineapple and glaze.
